Lemon Bars

The recipe that I am asked for is for most often is for my lemon bars. So, here it is. Enjoy!!

Lemon Bars

1. Preheat oven to 350 F
2. Spray 9x13 pan with non-stick spray
3. In medium-size bowl, mix together: 1 c. melted butter, ½ c. powdered sugar, 2 c. flour
4. Press flour mixture into 9x13" pan and bake for 20 min.
5. In separate bowl, beat together 4 eggs, lemon juice and grated zest from 2 lemons
6. Add 2 c. sugar, heaping ¼ c. flour, ½ t. baking powder and mix well
7. Pour egg mixture over baked crust and bake 25 min
8. Cool and cut into squares.

Note: VERY good frozen!
